Michelle’s Festive Cheese Ball
8 oz. Cream cheese softened
4 oz. dried beef finely chopped
3 TBSP Relish
12 Green olives minced
2 TBSP Mayo
Mix together with a fork until thoroughly combined. Form into ball and chill for at least one hour. Serve with assorted crackers and fresh veggies.
(I usually double the recipe because it seems that one is just never enough!)
Bacon Wrapped Shrimp
2 lbs. large raw shrimp* (cooked, peeled and deviened)
2 tsp. Old Bay seasoning
1 lb. bacon
2 cups dipping sauce (recipe follows)
Cut entire pound of bacon in half. Fry in a skillet over medium heat for about 3 minutes on each side. You don’t want to make it crisp or you won’t be able to wrap it around the shrimp. Wrap each shrimp in one piece of bacon. I start at one end and wrap the entire shrimp rather than wrapping the bacon over itself. Secure with toothpicks. Bake in a 350 degree oven for about 15 minutes until the edges of the bacon get crisp. Serve immediately with dipping sauce.
*Recipe is fantastic made with scallops also!
Dipping Sauce
1 cup ketchup
2 TBSP Worchestire sauce
1/4 cup packed brown sugar
1/2 tsp. onion powder
1/2 tsp. garlic powder
2 tsp. yellow mustard
Heat together in saucepan over medium heat until just starts to boil, stirring frequently. Simmer 5 minutes, stirring occasionally. Cool before serving.
Currie Family Pumpkin Dip
7 ounces marshmallow cream
8 ounces cream cheese, softened
1/2 cup canned pumpkin
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Blend all ingredients together until smooth. Serve with ginger snaps, animal crackers, fruit, or anything else you can think of!
