Alternative To Pumpkin Pie

What do you do with the pumpkin flesh that you scraped out of that Jack-O-Lantern? Tired of baking pumpkin pies? There’s got to be a better way to get rid of that left-over pumpkin! Don’t throw it out, try this simple but very tasty pumpkin roll that is perfect for brunch or dessert!
